So I guess certain times of the month are better than others for dieting....Ladies, you know what I mean. However, I realized that after a day of stuffing my face with Thai Food and even breaking down w/ a Starbucks Frappucino (I did order a Tall..meaning Small...for the first time in my life) that I felt worse.
I did. I felt worse. My joints hurt.. My shoulders ached. And I truly believe that whatever little health challenge I have (in the form of Ehlers-Danlos) must totally flare up with too much sugar.
So today I'm back at it. Water. Good meal plans, etc.
So what have I been eating? I figured I better write it down here or after I have another baby (not anytime soon) that I amy totally forget.
Main focus: no white carbs, desserts in excess (one time a week), or trans fats.
So. I eat a lot of eggs for breakfast with cocktail size rye bread with a tiny bit of Almont butter and maybe a little raspberry jame.
Or Kashi Go Lean cereal or Kashi something w/ Flax and Honey.
Lunches. Salads. I have become the master of salds that are more about the veggies than the lettuce and dressing. I have decided to chop up all kinds of vegetables and keep them in mini ziplocks in the fridge. Then I just grab a few of each veggie: carrots, broccoli, cucumber, even did squash and zuchini, tomatoe, celery, etc. And for my extra kick of protein: pine nuts, unsalted walnuts, chick peas, or tofu. Dressing: Balsamic vinegar, olive oil (expelled pressed), fresh basil, salt, and pepper. I make it myself. And it's yum!
Snacks.
Carrots & Hummus
Mini Rye Bread.
Plain Stoneyfields Yogurt, with Whole Foods granola, thawed out almost frozen berries, and a tiny drizzle of honey.
Shakes: tofu for shakes, frozen berries (skip bananas), milk or yogurt.
Ahhh... Dinner is trickier. I'll get to that later.
Chicken and Fish is the focus, with another salad, or yummy side of veggies.
Dropped out corn and potatoes for the time being.

Thanks for the great ideas. I struggle so much w/ menus and meal prep. I'm not so much into tofu - never had the nerve to try it. I do soy shakes for breakfast and fruit every morning. After that - it's down hill because I don't have plan. You are helping me want to have that plan. Thanks!
I just thought you might like to know who I am... my daughter, Rebekah lived across the street from Lindsay in Summerville. We now live in Oklahoma. My husband is a Pastor.
Didn't want you to think I'm some wierdo - I may be, but at least I have connections :)
I just followed the links and found your blog and it is exactly where I am - struggling to get back in control of my health.
Hey Jessica- this sounds almost exactly how I eat...and I based it from the South Beach Diet, which I adapted to fit my life style. Have you read the South Beach Diet book? If not, how did you come up with this eating plan?
You're doing great!
Crystal
yum! You just made me hungry. I think its good to have a bad eating day every once in a while because then we do feel like crap and it reminds us and motivates us to eat healthy again!I LOVE kashi go lean and all the other things you mentioned. I liked the yogurt and whole foods granola idea...I don't do a lot of dairy but need to fit in more yogurt.Thats also a good idea to cut up the veggies..I am loving this blog!keep goin chica!
